· 2 melons
· 200 g of cooked rice
· 150 g diced lean ham
· 2 shallots
· some capers
· 3 tbsp. tablespoon olive oil
· 1 C. sherry vinegar
· salt pepper
PREPARATION

1.
Cut the melons in half and remove the seeds.
2.
Using a spoon, take some balls of flesh from the melons.
3.
Peel and chop the shallots.
4.
Combine the oil, vinegar, salt and pepper in a bowl.
5.
Add the cooked rice, the melon balls, the diced ham, the capers and the
shallots then mix everything well.
6.
Distribute the preparation among the rinds of the melons.
7.
Place the melon rinds in the fridge until serving.
